Let me start out by saying “Thank You” for taking the time to browse my web site. My name is Robert Ahrens. I have been in the kolache business for almost 40 years.
was in 1970 that my father purchased a small bakery in Houston , Texas that produced authentic Czech. kolaches. After working with the family business for 10 yrs., I came to Austin , TX where I have owned and operated my own little Kolache Shoppe for almost 30 years. I have always had a passion for cooking/baking and, for my entire life, have made a living in some facet of the food business.
Through out my time in business, I have had numerous people come to me and ask how to make kolaches. Not just any kolaches, but kolaches like the ones that you make and sell at your bakery. These were folks that wanted to bake kolaches at home, start their own kolache bakeries, as well as folks that wanted to incorporate a kolache program into their existing bakery or donut shop. These inquiries have led me to develop both a “kolache training program” as well as a dry “kolache mix”. Let's start by talking about my training program. My training programs are custom designed on an individual basis and designed around the specific needs of each individual client. These needs include questions about how to start a bakery from scratch to incorporating a kolache program into their existing bakery. I can help you with things like start-to-finish production of traditional kolaches, development of new products, kitchen layout, types of equipment, menu development, cost controls, cost estimates, location considerations, etc. Why pay big bucks ($) for a franchise and have to deal with all of the regulations and constraints when I can teach you everything that you need to know to start up your own kolache bakery. You will own it and operate it outright without the hassles and expense of buying into an expensive and restrictive franchise. My training programs start at just $1500.00. I can't guarantee your success in your business endeavor, but I can share with you my almost 40 years of experience and provide you with all of the tools, information and techniques necessary to head you down the road to success.

Now, about my Kolache Mix. Visions of someday expanding my one unit shoppe into a multi-unit operation have led me to the necessary step of developing a dry kolache mix from my scratch recipe. The mix would function as the key to quality control by ensuring that each individual unit could maintain the highest level of quality and consistency. The mix must:
1.) be user friendly
2.) consistently produce a quality product
3.) be cost effective. In my conversations with potential manufacturers, I expressed my desire to develop a commercial kolache mix that emulated the authentic Czech. kolache I produced from scratch. As well, it had to perform the same, have the same great sweet yeasty flavor and exhibit the “light and fluffy” texture that is one of the most defining characteristics of my scratch dough kolache. Through much trial and error, I have finally located a manufacturer that has worked with me to develop what we think is the finest kolache/sweet bread mix on the market today. It is extremely user friendly while exhibiting superior performance and needs only water, eggs and yeast added to it to produce a batch of dough. The mix fully exhibits, and often exceeds, the integrity and superior characteristics of the scratch dough kolache that I have built my business on for almost 30 years. At a finished dough cost of about $.03 oz., it is very cost effective. Also, it's versatility allows you to control labor and production costs by producing multiple products from just one dough! With “The Mix”, you can produce anything from pigs-in-the-blanket to authentic open faced fruit kolaches. Or, how about a bacon, egg and cheese kolache roll. Maybe a cinnamon raisin roll or a cinnamon pecan roll. It also makes the most delicious, light and fluffy dinner roll, hamburger or sandwich bun. You can top the dinner rolls with poppy seeds or sesame seeds to create even more variety. How about a ham and swiss or a ham, cheddar and jalapeno kolache? The possibilities are endless!!
